🍽️ Crispy Red Cabbage Salad with Carrots

Ingredients
- 400 g Carrots
- 4 tbsp Olive oil
- 1 tbsp Lemon juice
- Salt
- Pepper (from the mill)
- Sugar (to taste)
- 600 g Red cabbage
- 2 tbsp White wine vinegar
- 2 tbsp Freshly chopped herbs (e.g. chives, parsley, dill, chervil, etc.)
Instructions
- 1. Peel the carrots.
- 2. Grate the carrots finely.
- 3. Add 1 tablespoon of oil and 1 tablespoon of lemon juice to the carrots.
- 4. Season the carrots with salt, pepper, and sugar.
- 5. Remove the outer leaves from the red cabbage.
- 6. Cut out the hard core from the red cabbage.
- 7. Slice the red cabbage into thin strips or shred it.
- 8. Add the remaining oil and vinegar to the red cabbage.
- 9. Season the red cabbage with salt and pepper.
- 10. Taste the red cabbage and adjust seasoning if needed.
- 11. Place the carrot salad in wooden bowls.
- 12. Sprinkle the salad with freshly chopped herbs.
- 13. Serve the salad.
