🍽️ Sweet and sour red cabbage with creamy mashed potatoes and fried sausage

Ingredients
- 1 red cabbage (ca. 1 kg)
- 1 apple
- 40 g clarified butter
- 1 tbsp sugar
- 1 onion
- 4 cloves
- 1 bay leaf
- 0.5 cinnamon stick
- 0.13 l dry red wine
- 0.13 l red wine vinegar
- 1 tbsp cranberries
- salt
- 500 g waxy potatoes
- 2 ripe apples
- 2 tbsp lemon juice
- 4 fried sausages
- 2 tbsp vegetable oil
- 250 ml lukewarm milk
- 40 g butter
- pepper (from the mill)
- nutmeg
- 30 g butter
Instructions
- 1. Cut the red cabbage in half and remove the hard core in the center.
- 2. Shred the two cabbage halves into thin strips.
- 3. Wash the apple, peel it, and cut it into quarters.
- 4. Remove the core from the apple quarters.
- 5. Cut the apple flesh into very small cubes.
- 6. Heat the ghee (clarified butter) in a large pot.
- 7. Add the apple cubes to the hot fat.
- 8. Sprinkle the apples with sugar.
- 9. Caramelize the apples lightly until they are golden brown.
- 10. Add the shredded red cabbage to the pot.
- 11. Sauté the cabbage briefly together with the apples.
- 12. Deglaze the vegetables with vinegar and wine.
- 13. Stab the onion with the cloves.
- 14. Add the studded onion, the cinnamon stick, and the bay leaf to the pot.
- 15. Cover the pot and let the red cabbage simmer on low heat for 40 to 50 minutes until tender.
- 16. Peel the potatoes and wash them under running water.
- 17. Cook the potatoes in boiling salted water for 25 to 30 minutes until done.
- 18. Peel the apples for the garnish.
- 19. Remove the core of the apples using a corer.
- 20. Slice or shred the apples into thin slices.
- 21. Drizzle the apple slices immediately with lemon juice to prevent them from browning.
- 22. Heat oil in a hot frying pan.
- 23. Fry the sausages until browned on all sides.
- 24. Drain the cooked potatoes.
- 25. Press the potatoes through a potato ricer.
- 26. Mix the potato mass with the milk and the butter.
- 27. Fold the finished red cabbage into the mashed potatoes.
- 28. Season the mashed potatoes with salt, pepper, and nutmeg.
- 29. Melt butter in another frying pan.
- 30. Fry the apple slices until golden yellow on both sides.
- 31. Cut the sausages into bite-sized pieces.
- 32. Plate the mashed potatoes, apple slices, and sausage pieces on pre-warmed plates.
