  2. 2. Shred the two cabbage halves into thin strips.
  3. 3. Wash the apple, peel it, and cut it into quarters.
  4. 4. Remove the core from the apple quarters.
  5. 5. Cut the apple flesh into very small cubes.
  6. 6. Heat the ghee (clarified butter) in a large pot.
  7. 7. Add the apple cubes to the hot fat.
  8. 8. Sprinkle the apples with sugar.
  9. 9. Caramelize the apples lightly until they are golden brown.
  10. 10. Add the shredded red cabbage to the pot.
  11. 11. Sauté the cabbage briefly together with the apples.
  12. 12. Deglaze the vegetables with vinegar and wine.
  13. 13. Stab the onion with the cloves.
  14. 14. Add the studded onion, the cinnamon stick, and the bay leaf to the pot.
  15. 15. Cover the pot and let the red cabbage simmer on low heat for 40 to 50 minutes until tender.
  16. 16. Peel the potatoes and wash them under running water.
  17. 17. Cook the potatoes in boiling salted water for 25 to 30 minutes until done.

  19. 19. Remove the core of the apples using a corer.

  21. 21. Drizzle the apple slices immediately with lemon juice to prevent them from browning.

  25. 25. Press the potatoes through a potato ricer.
  26. 26. Mix the potato mass with the milk and the butter.
  27. 27. Fold the finished red cabbage into the mashed potatoes.
  28. 28. Season the mashed potatoes with salt, pepper, and nutmeg.
  29. 29. Melt butter in another frying pan.
  30. 30. Fry the apple slices until golden yellow on both sides.
  31. 31. Cut the sausages into bite-sized pieces.
  32. 32. Plate the mashed potatoes, apple slices, and sausage pieces on pre-warmed plates.
