🍽️ Creamy Red Cabbage Soup with Apple

Ingredients
- 500 g small red cabbage (1 small red cabbage)
- 1 onion
- 1 apple
- 2 tbsp olive oil
- 1 tsp honey
- 3 tbsp red wine vinegar
- 100 ml cloudy apple juice
- 700 ml vegetable broth
- 1 pinch clove powder
- 1 star anise
- 1 pinch cinnamon
- salt
- pepper
- 50 g parmesan (1 piece; 30% fat in dry matter)
- 2 sprigs marjoram
- 20 g whipping cream (4 tsp)
Instructions
- 1. Wash the red cabbage thoroughly and pat it dry.
- 2. Remove the core and cut the head into four quarters.
- 3. Slice the cabbage into thin strips.
- 4. Peel the onion and chop it finely.
- 5. Wash the apple, dry it, and peel it.
- 6. Remove the core and dice the apple finely.
- 7. Heat the oil in a large pot.
- 8. Add the red cabbage, onions, and apple cubes to the pot.
- 9. Sauté the vegetables over medium heat for three minutes.
- 10. Drizzle the honey over the mixture.
- 11. Continue to caramelize the ingredients for five minutes.
- 12. Add the vinegar, apple juice, broth, and spices.
- 13. Let the soup simmer for 30 to 35 minutes.
- 14. Remove the star anise from the soup.
- 15. Puree the soup until smooth using a hand blender.
- 16. Grate or shave the Parmesan cheese coarsely.
- 17. Wash the marjoram and shake it dry.
- 18. Finely chop the marjoram leaves.
- 19. Season the soup with salt and pepper to taste.
- 20. Divide the soup among bowls.
- 21. Add one teaspoon of cream to each bowl.
- 22. Top the soup with the Parmesan.
- 23. Sprinkle the chopped marjoram leaves over the top.
