  2. 2. Remove the core and cut the head into four quarters.
  3. 3. Slice the cabbage into thin strips.
  4. 4. Peel the onion and chop it finely.
  5. 5. Wash the apple, dry it, and peel it.
  6. 6. Remove the core and dice the apple finely.
  7. 7. Heat the oil in a large pot.
  8. 8. Add the red cabbage, onions, and apple cubes to the pot.
  9. 9. Sauté the vegetables over medium heat for three minutes.
  10. 10. Drizzle the honey over the mixture.
  11. 11. Continue to caramelize the ingredients for five minutes.
  12. 12. Add the vinegar, apple juice, broth, and spices.
  13. 13. Let the soup simmer for 30 to 35 minutes.
  14. 14. Remove the star anise from the soup.
  15. 15. Puree the soup until smooth using a hand blender.
  16. 16. Grate or shave the Parmesan cheese coarsely.
  17. 17. Wash the marjoram and shake it dry.
  18. 18. Finely chop the marjoram leaves.
  19. 19. Season the soup with salt and pepper to taste.
  20. 20. Divide the soup among bowls.
  21. 21. Add one teaspoon of cream to each bowl.

  23. 23. Sprinkle the chopped marjoram leaves over the top.
