🍽️ Crispy Red Cabbage and Apple Salad with Walnuts

Ingredients
- 800 g red cabbage
- 2 apples
- 2 tbsp lemon juice
- salt
- 4 tbsp apple cider vinegar
- 1 tsp honey
- 4 tbsp olive oil
- pepper
- 2 tbsp walnut kernels (15 g each)
- 1 box cress
Instructions
- 1. Thoroughly wash the red cabbage and apples under running water.
- 2. Shred the red cabbage into fine, thin strips.
- 3. Cut the apples into narrow wedges.
- 4. Drizzle the apple wedges with one tablespoon of lemon juice to prevent them from browning.
- 5. Place the shredded red cabbage into a bowl.
- 6. Sprinkle the cabbage with a pinch of salt and add the remaining lemon juice.
- 7. Knead the mixture vigorously with your hands to soften the cabbage.
- 8. Let the cabbage rest for ten minutes to become more tender.
- 9. Whisk apple cider vinegar and honey together in a small bowl to make the dressing.
- 10. Slowly pour the oil into the vinegar-honey mixture while whisking continuously.
- 11. Finally, season the dressing to taste with salt and pepper.
- 12. Arrange the red cabbage and apples on the serving plates.
- 13. Drizzle the salad evenly with the prepared dressing.
- 14. Sprinkle some freshly ground pepper over the salad.
- 15. Roughly chop the walnuts with a knife.
- 16. Cut fresh cress from the bed or from the package.
- 17. Sprinkle the chopped walnuts and cress over the finished salad as a topping.
