Ingredients
- 1 kg red cabbage
- 2 apples
- 50 g clarified butter
- 1 tbsp sugar
- 1 onion
- 1 bay leaf
- 2 cloves
- 2 tbsp red wine vinegar
- 0.125 l red wine
- 0.125 l water
- salt
Instructions
- 1. Remove the outer leaves from the red cabbage.
- 2. Cut the cabbage head in half.
- 3. Remove the hard core in the center.
- 4. Slice the cabbage flesh into thin strips.
- 5. Wash the apples thoroughly.
- 6. Cut the apples into quarters.
- 7. Remove the core from the apple quarters.
- 8. Peel the apples completely.
- 9. Dice the apples into small cubes.
- 10. Heat butter fat in a large pot.
- 11. Add the apple cubes to the hot fat.
- 12. Sprinkle the apples with sugar.
- 13. Let the apples caramelize slightly.
- 14. Add the sliced red cabbage to the pot.
- 15. Sauté the cabbage and apples briefly.
- 16. Peel an onion.
- 17. Insert the spices into the peeled onion.
- 18. Place the spiced onion with the red cabbage.
- 19. Pour vinegar into the pot.
- 20. Pour wine into the pot.
- 21. Pour water into the pot.
- 22. Place the lid on the pot.
- 23. Let the dish cook over low heat for 40 minutes.
- 24. Season the red cabbage with salt.
- 25. Remove the spiced onion before serving.
