🍽️ Red Grape Jelly

Ingredients
- 1 kg red wine grapes
- 1 l red grape juice
- 1 Orange (unwaxed)
- 1 cardamom pod
- 500 g coconut blossom sugar
- 10 g agar-agar (2 tsp)
Instructions
- 1. Remove the red grapes from the stems and wash them thoroughly.
- 2. Lightly crush the grapes with a potato masher to release the juice.
- 3. Place the fruit and juice into a cooking pot.
- 4. Bring the mixture to a boil over high heat.
- 5. Reduce the heat and let the fruit simmer gently for about 20 to 30 minutes.
- 6. Cook the fruit until they are soft and falling apart.
- 7. Wash the orange thoroughly.
- 8. Slice the orange into thin rounds.
- 9. Add the orange slices and cardamom to the pot mixture.
- 10. Let the mixture simmer for another 10 minutes.
- 11. Pour the contents of the pot through a coarse nettle cloth.
- 12. Catch the draining juice in a bowl.
- 13. Let the juice drip overnight.
- 14. Bring water to a boil in a large pot.
- 15. Sterilize the jars by placing them in the boiling water for 10 minutes.
- 16. Mix the drained juice with coconut blossom sugar.
- 17. Bring the sweetener to a boil while stirring frequently.
- 18. Stir in the agar-agar powder.
- 19. Let the mixture boil for another 5 minutes.
- 20. Remove the cardamom pods from the jelly mixture.
- 21. Fill the hot jelly immediately into the prepared jars.
- 22. Wipe the rims of the jars clean.
- 23. Seal the jars tightly immediately.
- 24. Place the jars upside down on the lid to create a vacuum.
- 25. Repeat this process until all the jelly is bottled.
- 26. Turn the jars back over after about 5 minutes.
