  1. 1. Rinse the shrimp under cold water and pat them dry with a kitchen towel.
  2. 2. Peel the shallot and the garlic clove and cut them into very small cubes.
  3. 3. Heat two tablespoons of oil in a large pan and fry the shrimp briefly.
  4. 4. Remove the shrimp from the pan and set them aside on a plate.
  5. 5. Add the chopped shallot and garlic to the remaining hot oil and sauté them briefly.
  6. 6. Stir in the curry paste and let it fry briefly with the oil.
  7. 7. Deglaze the pan with the meat broth and the coconut milk.
  8. 8. Let the sauce simmer gently on low heat for about ten minutes until it thickens slightly.
  9. 9. Add the prepared shrimp back into the pan.
  10. 10. Let the shrimp cook in the sauce for about five minutes.
  11. 11. Season the curry finally with fish sauce, salt, and black pepper.
