🍽️ Creamy Red Shrimp Curry

Ingredients
- 24 large prawns (kitchen-ready, deveined and peeled except for the tail segment)
- 1 shallot
- 1 garlic clove
- 3 tbsp vegetable oil
- 1 tbsp red curry paste
- 200 ml fish stock
- 200 ml coconut milk
- fish sauce
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the shrimp under cold water and pat them dry with a kitchen towel.
- 2. Peel the shallot and the garlic clove and cut them into very small cubes.
- 3. Heat two tablespoons of oil in a large pan and fry the shrimp briefly.
- 4. Remove the shrimp from the pan and set them aside on a plate.
- 5. Add the chopped shallot and garlic to the remaining hot oil and sauté them briefly.
- 6. Stir in the curry paste and let it fry briefly with the oil.
- 7. Deglaze the pan with the meat broth and the coconut milk.
- 8. Let the sauce simmer gently on low heat for about ten minutes until it thickens slightly.
- 9. Add the prepared shrimp back into the pan.
- 10. Let the shrimp cook in the sauce for about five minutes.
- 11. Season the curry finally with fish sauce, salt, and black pepper.
