🍽️ Red quinoa salad with chicken skewers and yogurt

Ingredients
- 300 g red quinoa
- salt
- 600 g chicken breast fillet
- pepper
- 1 cucumber
- 5 tomatoes
- 1 red onion
- 10 g parsley (0.5 bunch)
- 0.5 lemon (juice)
- 4 tbsp olive oil
- 2 tbsp rapeseed oil
- 150 g Greek yogurt (10% fat)
- 1 box cress
- 8 skewers (made of wood or metal)
Instructions
- 1. Rinse the quinoa under running water.
- 2. Place the quinoa in a pot with two and a half times its volume in salted water.
- 3. Cook the quinoa for about 15 minutes until it is al dente.
- 4. Let the cooked quinoa cool down completely.
- 5. Rinse the chicken breast fillets under cold water.
- 6. Pat the fillets dry with a kitchen towel.
- 7. Cut the chicken meat into small cubes.
- 8. Thread the chicken cubes onto eight wooden skewers.
- 9. Season the skewers with salt and pepper.
- 10. Wash the cucumber and tomatoes thoroughly.
- 11. Remove any hard parts or seeds from the cucumber.
- 12. Cut the cucumber into fine cubes.
- 13. Cut the tomatoes into fine cubes.
- 14. Peel the onion.
- 15. Finely chop the onion.
- 16. Wash the parsley.
- 17. Shake the parsley dry.
- 18. Finely chop the parsley.
- 19. Place the cooled quinoa in a large bowl.
- 20. Add the diced cucumber to the quinoa.
- 21. Add the diced tomatoes to the bowl.
- 22. Add the chopped onion to the bowl.
- 23. Add the chopped parsley to the bowl.
- 24. Pour lemon juice over the salad.
- 25. Pour olive oil over the salad.
- 26. Mix all ingredients well together.
- 27. Season the salad to taste with salt and pepper.
- 28. Heat rapeseed oil in a frying pan.
- 29. Place the chicken skewers in the hot pan.
- 30. Fry the skewers for 10 minutes over medium heat.
- 31. Turn the skewers regularly so they cook on all sides.
- 32. Plate the quinoa salad on the dishes.
- 33. Place the fried chicken skewers on top of the salad.
- 34. Drizzle yogurt over the skewers.
- 35. Cut fresh cress from the bed.
- 36. Garnish the skewers with the cress.
