🍽️ Crunchy salad with beetroot and matjes herring

Ingredients
- 250 g beetroot (cooked; vacuum-packed)
- 1 apple
- 1 onion
- 3 small gherkins
- 8 matjes fillets (100 g each)
- 2 hard-boiled eggs
- 1 tbsp rapeseed oil
- salt
- 1 tbsp apple cider vinegar
- 1 tsp liquid honey
- pepper
- 200 g sour cream
Instructions
- 1. Dice the beetroot into small cubes.
- 2. Wash the apple thoroughly.
- 3. Cut the apple into four quarters.
- 4. Remove the core from the apple pieces.
- 5. Dice the apple into small cubes as well.
- 6. Peel the onion.
- 7. Finely chop the onion.
- 8. Take the cucumbers out of their liquid.
- 9. Dice the cucumbers finely.
- 10. Pat the matjes fillets dry with a kitchen towel.
- 11. Cut the matjes fillets into bite-sized pieces.
- 12. Dice the boiled eggs into small cubes.
- 13. Place the beetroot, onions, cucumbers, and apple into a bowl.
- 14. Add oil, salt, vinegar, honey, pepper, and sour cream.
- 15. Mix all ingredients well.
- 16. Let the mixture stand for about 20 minutes.
- 17. Adjust the seasoning with a little more salt and pepper.
- 18. Gently fold the matjes pieces into the salad.
- 19. Gently fold the egg pieces into the salad.
- 20. Serve the finished salad in small bowls.
