🍽️ Fruity Red Bulgur Salad

Ingredients
- 250 g fine bulgur
- 2 bell peppers (green and yellow)
- 2 tomatoes
- 2 spring onions
- 1 handful fresh parsley
- 3 tbsp tomato paste
- 1 tbsp ajvar
- 4 tbsp olive oil
- 1 tsp sambal oelek
- garlic powder
- paprika powder
- 1 tsp lemon juice
- salt
- pepper (from the mill)
Instructions
- 1. Place the bulgur in a bowl.
- 2. Cover the bulgur with lukewarm water.
- 3. Let the bulgur soak for about 20 minutes.
- 4. Wash the bell pepper thoroughly.
- 5. Remove the seeds and white membranes from the bell pepper.
- 6. Dice the bell pepper into small cubes.
- 7. Wash the tomatoes.
- 8. Remove the stem ends and seeds from the tomatoes.
- 9. Dice the tomatoes into small cubes as well.
- 10. Wash the spring onions.
- 11. Slice the spring onions into thin rings.
- 12. Wash the parsley.
- 13. Shake the parsley dry.
- 14. Chop the parsley leaves finely.
- 15. In a separate bowl, mix the tomato paste with ajvar.
- 16. Add the olive oil to the seasoning mixture.
- 17. Add the sambal oelek.
- 18. Add some garlic powder.
- 19. Add some paprika powder.
- 20. Add the lemon juice.
- 21. Add the diced bell pepper to the bulgur mixture.
- 22. Add the diced tomatoes to the bulgur mixture.
- 23. Add the spring onion rings to the bulgur mixture.
- 24. Add the chopped parsley to the bulgur mixture.
- 25. Gently fold the salad to combine all ingredients.
- 26. Let the salad marinate for at least 1 hour.
- 27. Serve the salad in small Weck jars as desired.
