🍽️ Avocado Salad with Spicy Red Onions

Ingredients
- 2 red onions (halved crosswise, then cut into wedges)
- 1 green chili (sliced into rings, seeded)
- 1 bunch cilantro (chop half of the leaves, save the rest for garnish)
- 7 tbsp olive oil
- 1 garlic clove (pressed)
- 6 tbsp lemon juice
- 3 tbsp sherry vinegar
- salt
- pepper (from the mill)
- 1 pinch sugar
- cayenne pepper
Instructions
- 1. Heat one tablespoon of olive oil in a pan over medium heat.
- 2. Add the red onion pieces to the pan and sauté them for about two minutes.
- 3. Add the chopped garlic and stir everything briefly.
- 4. Remove the pan from the heat immediately so the mixture does not continue to cook.
- 5. Stir three tablespoons of lemon juice and sherry vinegar into the warm onion mixture.
- 6. Season the liquid with a pinch of salt, black pepper, a pinch of sugar, and some cayenne pepper.
- 7. Gently fold in the finely chopped cilantro leaves and the pepperoni rings.
- 8. Cut the avocados in half lengthwise and carefully remove the pit.
- 9. Peel the avocado halves and cut the flesh into bite-sized wedges.
- 10. Drizzle the avocado pieces with the remaining lemon juice to prevent browning.
- 11. Arrange the avocado pieces attractively on a serving platter.
- 12. Pour the lukewarm onion mixture evenly over the avocados.
- 13. Garnish the dish with a few fresh cilantro leaves and serve immediately.
