🍽️ Sardines with Lemon-Coriander Marinade

Ingredients
- 1 kg fresh sardines (ready for cooking)
- salt
- pepper (from the mill)
- juice of one lemon
- 2 tbsp olive oil
- 2 red onions
- 4 garlic cloves
- 1 tsp coriander seeds (coarsely crushed)
- 150 ml red wine vinegar
- 4 tbsp red wine
- coriander leaves (for garnish)
Instructions
- 1. Season the sardines generously with salt and pepper.
- 2. Drizzle lemon juice over the fish.
- 3. Place the sardines in a baking dish lightly greased with oil.
- 4. Let the marinade work on the fish for about 30 minutes.
- 5. Peel the onions.
- 6. Slice the onions into rings.
- 7. Heat 2 tablespoons of olive oil in a pan.
- 8. Sauté the onion rings in the oil until they are translucent.
- 9. Press the garlic directly into the pan.
- 10. Fry the garlic briefly with the onions.
- 11. Deglaze the pan with vinegar.
- 12. Add the wine.
- 13. Bring the liquid to a boil.
- 14. Season the mixture with coriander, salt, and pepper.
- 15. Pour the onion mixture over the sardines in the baking dish.
- 16. Preheat the oven to 180 degrees (conventional or fan-assisted).
- 17. Seal the baking dish tightly with aluminum foil.
- 18. Place the dish on the middle rack in the oven.
- 19. Bake the sardines for about 25 minutes.
- 20. Remove the dish from the oven.
- 21. Let the sardines cool down.
- 22. Garnish the finished sardines with fresh coriander leaves.
- 23. Serve the dish.
