  3. 3. Place the beetroot chunks into a pot.
  4. 4. Add the vinegar, a pinch of salt, and 100 milliliters of water.
  5. 5. Cover the pot and simmer the beets on medium heat for about 30 minutes until tender.
  6. 6. Let the mixture cool down.
  7. 7. Pour the liquid through a sieve into a container and reserve the broth.
  8. 8. Puree the soft beetroot until smooth.
  9. 9. Put the flour, beet puree, eggs, one tablespoon of oil, and salt into a bowl.
  10. 10. Knead the ingredients into a smooth and elastic dough.
  11. 11. If the dough is too dry, add a little of the reserved broth.
  12. 12. If the dough is too sticky, add a little more flour.
  13. 13. Shape the dough into a ball.
  14. 14. Wrap the dough ball in cling film.
  15. 15. Let the dough rest for about 30 minutes.
  16. 16. Divide the dough into portions for the pasta machine.
  17. 17. Set the pasta machine and roll out the dough pieces into tagliatelle noodles.
  18. 18. Shape the noodles into small nests.
  19. 19. Sprinkle some flour on the work surface.
  20. 20. Place the noodle nests on the floured surface.
  21. 21. Let the noodles dry for about 10 minutes.
  22. 22. Peel the onions while you wait.
  23. 23. Cut the onions into thin strips.
  24. 24. Heat the remaining oil in a pan.
  25. 25. Fry the onion strips on medium heat for about 10 minutes until golden brown.
  26. 26. Bring a pot of salted water to a boil.
  27. 27. Cook the noodles in the salted water for 3 to 4 minutes until al dente.
  28. 28. Add some pasta cooking water to the pan with the onions.
  29. 29. Stir the raisins and nuts into the onions.
  30. 30. Season the mixture with salt and pepper.
  31. 31. Drain the noodles.
  32. 32. Place the noodles on the plates.
  33. 33. Spoon the onion-raisin mixture over the noodles.
  34. 34. Serve the dish immediately.
