🍲 Creamy Red Lentil Turmeric Soup

Ingredients
- 350 g lentils
- 3 tomatoes
- 1 onion
- 1 piece ginger (approx. 2 cm)
- 1 l vegetable broth
- 0.5 tsp turmeric powder
- 200 ml whipping cream
- salt
- pepper
- 50 g butter
- 1 tbsp oil
- 1 tsp cumin powder
Instructions
- 1. Place the red lentils in a sieve.
- 2. Rinse the lentils under cold water.
- 3. Repeat rinsing until the water runs clear.
- 4. Pour boiling water over the tomatoes.
- 5. Peel off the skin from the tomatoes.
- 6. Halve the tomatoes.
- 7. Remove the core from the tomatoes.
- 8. Dice the flesh of the tomatoes into small cubes.
- 9. Peel the onion.
- 10. Slice the onion into thin half-rings.
- 11. Peel the ginger.
- 12. Grate the ginger finely.
- 13. Put the washed lentils into a pot.
- 14. Pour the vegetable broth into the pot.
- 15. Add the diced tomatoes to the pot.
- 16. Add the grated ginger to the pot.
- 17. Add the turmeric to the pot.
- 18. Bring the mixture to a boil.
- 19. Reduce the heat.
- 20. Let the soup simmer on low heat for about 30 minutes.
- 21. Puree the soup in batches until smooth.
- 22. Stir in the cream into the soup.
- 23. Bring the soup back to a boil.
- 24. Season the soup to taste.
- 25. Check the consistency of the soup.
- 26. Add a little more vegetable broth or water if the soup is too thick.
