🍽️ Red lentils with apple

Ingredients
- 4 small tart apples (e.g. Cox Orange)
- 750 ml vegetable broth
- 2 tsp dried tarragon
- 400 g red lentils
- salt
- pepper
- 4 tbsp chopped walnuts
- 4 tbsp cold-pressed walnut oil (or argan oil, for drizzling)
Instructions
- 1. Peel the apples and cut them in half.
- 2. Remove the stem, the blossom end, and the core from the apple halves.
- 3. Cut the apple flesh into thin wedges.
- 4. Add the vegetable broth and tarragon to a small pot.
- 5. Bring the broth with tarragon to a boil.
- 6. Add the red lentils to the boiling broth.
- 7. Let the lentils simmer on low heat.
- 8. Wait for 5 minutes.
- 9. Fold the apple wedges into the lentils.
- 10. Simmer the dish for another 5 minutes, stirring occasionally.
- 11. Continue cooking until all liquid has been absorbed by the lentils.
- 12. Season the dish generously with salt and pepper.
- 13. Fold the nuts into the finished dish.
- 14. Drizzle the dish with walnut oil before serving.
