🍰 Red Grütze made with Melons and Sour Cherries

Ingredients
- 250 g Sweet Cherry
- 250 g Honeydew Melon (without peel)
- 4 tbsp Rosé Wine
- 1 pcs Lemon Peel
- 1 tbsp Lemon Juice
- 2 tbsp Sugar
- 1 Cinnamon Stick
- 0.5 tsp Cornstarch
- 125 g Whipping Cream (min. 30 % Fat)
Instructions
- 1. Wash the sweet cherries thoroughly.
- 2. Let the cherries drain.
- 3. Pit the cherries.
- 4. Catch any released cherry juice in a bowl.
- 5. Cut the melon flesh into small cubes.
- 6. Add the wine, lemon zest, lemon juice, sugar, and cinnamon stick to a pot.
- 7. Bring the wine mixture to a boil.
- 8. Add the pitted cherries and melon cubes to the boiling liquid.
- 9. Simmer the fruits over low heat.
- 10. Cook until the fruits are soft but still have a slight bite.
- 11. Mix the cornstarch with a small amount of cold water to form a smooth paste.
- 12. Stir the starch paste into the fruit mixture.
- 13. Cook briefly until the mixture thickens.
- 14. Remove the cinnamon stick and lemon zest from the grütze.
- 15. Portion the warm grütze into bowls.
- 16. Place the grütze in the refrigerator until cold.
- 17. Whip the cream until stiff.
- 18. Place a spoonful of whipped cream on each portion of grütze.
