  4. 4. Catch any released cherry juice in a bowl.
  5. 5. Cut the melon flesh into small cubes.
  6. 6. Add the wine, lemon zest, lemon juice, sugar, and cinnamon stick to a pot.
  7. 7. Bring the wine mixture to a boil.
  8. 8. Add the pitted cherries and melon cubes to the boiling liquid.
  9. 9. Simmer the fruits over low heat.
  10. 10. Cook until the fruits are soft but still have a slight bite.
  11. 11. Mix the cornstarch with a small amount of cold water to form a smooth paste.
  12. 12. Stir the starch paste into the fruit mixture.
  13. 13. Cook briefly until the mixture thickens.
  14. 14. Remove the cinnamon stick and lemon zest from the grütze.
  15. 15. Portion the warm grütze into bowls.
