🍰 Red Fruit Grütze

Ingredients
- 300 g red currants
- 250 g strawberries
- 100 g black currants
- 200 g sour cherries
- 100 g sugar
- 12 l red currant juice
- 50 g cornstarch
Instructions
- 1. Set aside four sprigs of red currants for decoration.
- 2. Strip the remaining red currants from the stems using a fork.
- 3. Wash all the berries and set them aside.
- 4. Wash the raspberries, strawberries, and sour cherries.
- 5. Pit the sour cherries.
- 6. Put 200 grams of red currants, the black currants, and half of the strawberries into a pot.
- 7. Sprinkle the fruits in the pot with sugar.
- 8. Pour the juice over the fruits.
- 9. Heat the mixture in the pot.
- 10. Simmer the fruits for a few minutes.
- 11. Pour the cooked fruits through a sieve to create a smooth puree.
- 12. Bring the strained liquid back to a boil.
- 13. Mix the cornstarch with a little cold water until smooth, ensuring no lumps remain.
- 14. Add the starch-water mixture to the boiling fruit puree.
- 15. Let the mixture boil a few times to thicken.
- 16. Gently fold in the remaining fresh fruits into the thickened mixture.
- 17. Heat everything briefly, but do not boil vigorously.
- 18. Fill the grütze into bowls.
- 19. Place the bowls in the refrigerator.
- 20. Garnish the finished dessert with the reserved currants and mint sprigs before serving.
