  1. 1. Slice the vanilla pod lengthwise and scrape out the seeds.
  2. 2. Add the pod, seeds, milk, cream, and 2 tablespoons of sugar to a pot.
  3. 3. Heat the mixture until it comes to a boil.
  4. 4. Remove the pot from the heat and set it aside.
  5. 5. Whisk the eggs, egg yolks, and remaining sugar in a bowl.
  6. 6. Place the bowl over a pot of hot water (bain-marie).
  7. 7. Whisk the egg mixture with a whisk until it becomes creamy.
  8. 8. Slowly stir the hot vanilla cream into the egg mixture.
  9. 9. Continue stirring until the sauce is smooth and creamy.
  10. 10. Strain the vanilla sauce through a fine sieve to remove lumps.
  11. 11. Let the sauce cool down.
  12. 12. Gently rinse the redcurrants, blueberries, and raspberries.
  13. 13. Dry the berries on kitchen paper.
  14. 14. Wash the strawberries and remove the green tops.
  15. 15. Cut the strawberries in half or quarters depending on their size.
  16. 16. Mix the cornstarch with 3-4 tablespoons of redcurrant juice to form a smooth paste.
  17. 17. Add the remaining redcurrant juice, cherry juice, and sugar to a pot.
  18. 18. Add the orange peel and cinnamon stick to the juice.
  19. 19. Bring the juice to a boil.
  20. 20. Stir the prepared cornstarch mixture into the boiling juice.
  21. 21. Let the mixture simmer gently for about 2 minutes over low heat.
  22. 22. Pour the thickened juice through a sieve into a large bowl.
  23. 23. Add all the prepared berries to the juice.
  24. 24. Gently stir the berries in to avoid crushing them.
  25. 25. Fill the red fruit grütze into dessert bowls.
  26. 26. Let the grütze cool down.
  27. 27. Pour the cooled vanilla sauce over the red fruit grütze before serving.
