🍽️ Beetroot and Onion Salad

Ingredients
- 4 small cooked beets (peeled and cut into wedges)
- 1 vegetable onion (cooked al dente, cut into wedges)
- 3 red onions (peeled and cut into wedges)
- 150 ml olive oil
- 50 ml red wine vinegar
- 2 tsp mustard
- 2 tbsp thyme leaves
- 2 tbsp oregano
- salt
- freshly ground black pepper
- chili powder
Instructions
- 1. Preheat your grill and place the vegetables on it. Cook them slowly on both sides until they have a nice golden-brown color.
- 2. Mix all ingredients well together for the marinade. Place the vegetables in the mixture and let it marinate covered for 30 to 40 minutes.
