🥗 Beetroot Salad with Crab Meat

Ingredients
- 2 Beet
- 2 Apples
- 1 Bunch Arugula
- 1 Tbsp chopped Dill
- 1 Red Onion
- 150 g Crab Meat
- 3 Tbsp chopped Walnuts
- 1 tsp Horseradish (freshly grated or jar)
- 150 g Yogurt
- 1 Tbsp Lemon Juice
- 1 tsp Honey
- Salt
- Pepper from the mill
Instructions
- 1. Wash the beetroot, apples, arugula, and dill under running water.
- 2. Peel the beetroot and cut it into thin strips.
- 3. Halve the apples, remove the core, and dice the flesh into small cubes.
- 4. Tear the arugula leaves into bite-sized pieces.
- 5. Peel the onion and cut it into thin strips as well.
- 6. Rinse the crab meat and gently pat it dry with a kitchen towel.
- 7. Whisk the horseradish, yogurt, lemon juice, honey, and chopped dill in a bowl until you have a creamy dressing.
- 8. Season the dressing to taste with salt and pepper.
- 9. Add all prepared ingredients to a large bowl and toss them thoroughly with the yogurt dressing.
