  1. 1. Squeeze the lemon to extract the juice.
  2. 2. Put the bulgur into a pot.
  3. 3. Pour three tablespoons of lemon juice and vegetable broth over it.
  4. 4. Bring the mixture to a boil.
  5. 5. Let the bulgur simmer for ten minutes.
  6. 6. Wash the beetroot and the apple thoroughly.
  7. 7. Remove the tough parts from the beetroot and the apple.
  8. 8. Cut the beetroot and apple into small, bite-sized pieces.
  9. 9. Cut the feta cheese into small cubes.
  10. 10. Roughly chop the walnut kernels.
  11. 11. Wash the spring onions.
  12. 12. Trim the ends of the spring onions.
  13. 13. Slice the spring onions into thin rings.
  14. 14. Take a large bowl.
  15. 15. Add the cooked bulgur to the bowl.
  16. 16. Add the beetroot and apple pieces.
  17. 17. Add the feta cubes.
  18. 18. Mix all ingredients well together.
  19. 19. Add the remaining lemon juice.
  20. 20. Season the salad with salt.
  21. 21. Season the salad with pepper.
  22. 22. Divide the salad onto plates.
  23. 23. Sprinkle the chopped walnuts over the top.
  24. 24. Garnish the salad with the spring onion rings.
