🍽️ Beetroot, Bulgur, Feta and Apple Salad

Ingredients
- 0.5 lemon
- 100 g bulgur
- 250 ml vegetable broth
- 300 g beetroot (pre-cooked; vacuum-packed)
- 0.5 apple (75 g)
- 70 g feta
- 10 g walnut kernels
- 1 spring onion
- salt
- pepper
Instructions
- 1. Squeeze the lemon to extract the juice.
- 2. Put the bulgur into a pot.
- 3. Pour three tablespoons of lemon juice and vegetable broth over it.
- 4. Bring the mixture to a boil.
- 5. Let the bulgur simmer for ten minutes.
- 6. Wash the beetroot and the apple thoroughly.
- 7. Remove the tough parts from the beetroot and the apple.
- 8. Cut the beetroot and apple into small, bite-sized pieces.
- 9. Cut the feta cheese into small cubes.
- 10. Roughly chop the walnut kernels.
- 11. Wash the spring onions.
- 12. Trim the ends of the spring onions.
- 13. Slice the spring onions into thin rings.
- 14. Take a large bowl.
- 15. Add the cooked bulgur to the bowl.
- 16. Add the beetroot and apple pieces.
- 17. Add the feta cubes.
- 18. Mix all ingredients well together.
- 19. Add the remaining lemon juice.
- 20. Season the salad with salt.
- 21. Season the salad with pepper.
- 22. Divide the salad onto plates.
- 23. Sprinkle the chopped walnuts over the top.
- 24. Garnish the salad with the spring onion rings.
