  1. 1. Cook the rice noodles according to the package instructions until al dente.
  2. 2. Rinse the red mullet and pat them dry with a kitchen towel.
  3. 3. Use a sharp knife to make three shallow cuts into the skin on each side of the fish.
  4. 4. Wash the spring onions, trim the ends, and cut them into pieces about 3 cm long.
  5. 5. Peel the garlic and chop it finely.
  6. 6. Mix the chopped garlic with grated or chopped ginger.
  7. 7. Stuff the garlic-ginger mixture into the cuts you made in the fish.
  8. 8. Season the inside of the fish meat with a little soy sauce.
  9. 9. Heat oil in a wok and sauté the spring onions in it.
  10. 10. Deglaze the onions with fish stock.
  11. 11. Place the prepared fish into the wok.
  12. 12. Pour the chili sauce over the fish.
  13. 13. Steam the fish covered for about 5 to 6 minutes until cooked.
  14. 14. Carefully remove the fish from the wok and set them aside.
  15. 15. Add the cooked rice noodles to the wok.
  16. 16. Toss the noodles briefly and season them to taste with soy sauce.
  17. 17. Arrange the fish and noodles on a pre-warmed platter.
