🍽️ Red Mullet with Rice Noodles

Ingredients
- 300 g wide rice noodles
- 720 g red snapper (4 red snappers), ready for the kitchen
- 1 bunch spring onions
- 2 garlic cloves
- 1 tbsp freshly grated ginger
- 2 tbsp oil
- 400 ml fish stock
- 3 tbsp chili sauce
- light soy sauce (to taste)
Instructions
- 1. Cook the rice noodles according to the package instructions until al dente.
- 2. Rinse the red mullet and pat them dry with a kitchen towel.
- 3. Use a sharp knife to make three shallow cuts into the skin on each side of the fish.
- 4. Wash the spring onions, trim the ends, and cut them into pieces about 3 cm long.
- 5. Peel the garlic and chop it finely.
- 6. Mix the chopped garlic with grated or chopped ginger.
- 7. Stuff the garlic-ginger mixture into the cuts you made in the fish.
- 8. Season the inside of the fish meat with a little soy sauce.
- 9. Heat oil in a wok and sauté the spring onions in it.
- 10. Deglaze the onions with fish stock.
- 11. Place the prepared fish into the wok.
- 12. Pour the chili sauce over the fish.
- 13. Steam the fish covered for about 5 to 6 minutes until cooked.
- 14. Carefully remove the fish from the wok and set them aside.
- 15. Add the cooked rice noodles to the wok.
- 16. Toss the noodles briefly and season them to taste with soy sauce.
- 17. Arrange the fish and noodles on a pre-warmed platter.
