🍽️ Pan-fried Red Mullet with Corn and Peas

Ingredients
- 8 red mullet fillets
- 2 bunch spring onions
- 300 g frozen peas
- 200 g corn kernels (can)
- salt
- pepper (from the mill)
- flour (for dusting)
- 2 tbsp butter
- 4 tbsp olive oil
- fresh chervil (for garnish)
Instructions
- 1. Rinse the fish fillets under running water.
- 2. Pat the fillets completely dry with kitchen paper.
- 3. Clean the spring onions and wash them.
- 4. Let the peas thaw.
- 5. Drain the corn in a sieve.
- 6. Season the fish fillets with salt.
- 7. Season the fish fillets with pepper.
- 8. Lightly dust the fillets with flour.
- 9. Shake off any excess flour from the fillets.
- 10. Heat the butter in a frying pan.
- 11. Fry the spring onions in the butter.
- 12. Stir until the onions become translucent.
- 13. Add the peas to the pan.
- 14. Add the corn to the pan.
- 15. Season the vegetables with salt.
- 16. Season the vegetables with pepper.
- 17. Cook the vegetables while stirring occasionally.
- 18. Let the vegetables cook for 5 to 8 minutes.
- 19. Heat the olive oil in a non-stick frying pan.
- 20. Fry the fish fillets in the pan.
- 21. Fry the fillets for approx. 2 minutes on each side.
- 22. Distribute the vegetables onto plates.
- 23. Place the fish on top of the vegetables.
- 24. Garnish the dish with fresh chervil.
