🍽️ Red Mullet in Parchment Packets

Ingredients
- 4 Red Mullet (at 350g, ready for cooking)
- Salt (from the mill)
- Pepper from the mill
- 2 Garlic cloves
- 1 bunch Parsley (flat)
- Lemon juice (from one lemon)
- 4 tsp Olive oil
- Parchment paper
- Lemons (for garnishing)
Instructions
- 1. Rinse the red mullets under running water.
- 2. Season the fish inside and out with salt and pepper.
- 3. Peel the garlic cloves.
- 4. Slice the garlic into thin pieces.
- 5. Rinse the parsley and shake it dry.
- 6. Pick the parsley leaves off the stems.
- 7. Stack two to three sheets of parchment paper on top of each other.
- 8. Place one fish on the paper.
- 9. Distribute the garlic slices over the fish.
- 10. Add some parsley leaves to the fish.
- 11. Drizzle the fish with lemon juice.
- 12. Add some olive oil over the fish.
- 13. Seal the parchment paper into a tight packet.
- 14. Place the packets on a baking sheet.
- 15. Preheat the oven to 220 degrees (convection: 200 degrees, gas: level 5-6).
- 16. Slide the tray onto the middle rack.
- 17. Bake the packets for 20 to 25 minutes.
- 18. Distribute the remaining parsley leaves on the plates.
- 19. Carefully open the packets.
- 20. Place the fish on the plates along with the cooking juices.
- 21. Garnish the dishes with lemon slices.
- 22. Serve the fish hot.
