  1. 1. Rinse the red mullets under running water.
  2. 2. Season the fish inside and out with salt and pepper.
  3. 3. Peel the garlic cloves.
  4. 4. Slice the garlic into thin pieces.
  5. 5. Rinse the parsley and shake it dry.
  6. 6. Pick the parsley leaves off the stems.
  7. 7. Stack two to three sheets of parchment paper on top of each other.
  8. 8. Place one fish on the paper.
  9. 9. Distribute the garlic slices over the fish.
  10. 10. Add some parsley leaves to the fish.
  11. 11. Drizzle the fish with lemon juice.
  12. 12. Add some olive oil over the fish.
  13. 13. Seal the parchment paper into a tight packet.
  14. 14. Place the packets on a baking sheet.
  15. 15. Preheat the oven to 220 degrees (convection: 200 degrees, gas: level 5-6).
  16. 16. Slide the tray onto the middle rack.
  17. 17. Bake the packets for 20 to 25 minutes.
  18. 18. Distribute the remaining parsley leaves on the plates.
  19. 19. Carefully open the packets.
  20. 20. Place the fish on the plates along with the cooking juices.
  21. 21. Garnish the dishes with lemon slices.
  22. 22. Serve the fish hot.
