🍽️ Pan-fried Red Mullet on Arugula Salad with Tomato Vinaigrette

Ingredients
- 400 g Red Mullet Fillet
- 2 tbsp Lemon Juice
- 2 small white Onions
- 4 Tomatoes
- 1 bunch Arugula
- Salt
- Pepper
- 2 tbsp Pesto
- 1 tbsp chopped Capers
- 2 tbsp Butter
- 1 tsp chopped Herbs
Instructions
- 1. Wash the arugula thoroughly.
- 2. Spin the arugula dry.
- 3. Remove any wilted leaves from the arugula.
- 4. Peel the onions.
- 5. Halve the onions.
- 6. Separate the onions into individual layers.
- 7. Wash the tomatoes.
- 8. Dice the tomatoes into small cubes.
- 9. Heat the butter in a pan.
- 10. Sauté the onions in the butter.
- 11. Remove the onions from the pan.
- 12. Set the onions aside.
- 13. Pan-fry the fish fillets in the remaining butter.
- 14. Season the fish fillets with salt.
- 15. Season the fish fillets with pepper.
- 16. Drizzle lemon juice over the fish fillets.
- 17. Add the tomatoes to the pan.
- 18. Add the herbs to the pan.
- 19. Add the onions to the pan.
- 20. Toss the ingredients in the pan.
- 21. Adjust the seasoning of the mixture.
- 22. Distribute the arugula onto the plates.
- 23. Place the fish fillets on top of the arugula.
- 24. Pour the butter-onion-tomato mixture from the pan over the fish.
- 25. Drizzle pesto over the dish.
- 26. Sprinkle capers over the dish.
