Ingredients
- 6 large bread slices (as desired, e.g. dark bread, halved or Ciabatta)
- olive oil (for frying)
- 1 small tomato
- 500 g mixed cherry tomatoes (red, yellow, small, large)
- 1 shallot (finely chopped)
- 0.5 bunch chervil (the leaves)
Instructions
- 1. Heat some olive oil in a large frying pan.
- 2. Fry the bread slices in the hot oil until golden brown and crunchy on both sides.
- 3. Take the tomato and cut it in half.
- 4. Rub the cut surface of the tomato firmly over the surface of the toasted bread slices.
- 5. This step distributes the tomato juice and pulp evenly over the bread.
- 6. Halve the cherry tomatoes.
- 7. Cut the shallot into fine cubes or strips.
- 8. Heat one tablespoon of olive oil in a separate pan.
- 9. Sauté the halved cherry tomatoes and the shallot briefly in the hot oil.
- 10. Remove the pan from the heat.
- 11. Distribute the warm tomatoes and shallots over the toasted bread slices.
- 12. Pluck some chervil leaves and sprinkle them on top.
- 13. Season the toast with salt and pepper to taste.
- 14. Serve the bruschetta immediately while it is still warm or lukewarm.
