  1. 1. Rinse the sardines inside and out under running water.
  2. 2. Pat the fish dry with a kitchen towel.
  3. 3. Wash the rosemary sprigs under running water.
  4. 4. Shake the herbs dry.
  5. 5. Cut the rosemary sprigs into small pieces using kitchen scissors.
  6. 6. Stuff the hollowed-out sardines with the rosemary pieces.
  7. 7. Secure the openings of the fish with toothpicks.
  8. 8. Halve the chili pepper lengthwise.
  9. 9. Remove the seeds from the chili pepper.
  10. 10. Rinse the chili half under running water.
  11. 11. Finely chop the chili pepper.
  12. 12. Place the chopped chili into a small bowl.
  13. 13. Add a little salt.
  14. 14. Add the olive oil.
  15. 15. Mix the mixture well.
  16. 16. Brush the sardines with the chili oil mixture.
  17. 17. Take two long skewers.
  18. 18. Insert the skewers parallel through the four sardines.
  19. 19. Ensure the fish can be turned easily.
  20. 20. Place the sardines on the hot grill.
  21. 21. Grill the fish for about four to five minutes on each side.
  22. 22. Serve the rosemary sardines.
