  1. 1. Place the bread roll in a bowl with lukewarm water.
  2. 2. Peel the onion and dice it into very small cubes.
  3. 3. Heat one tablespoon of oil in a pan.
  4. 4. Fry the onion cubes in the hot oil until they are soft and translucent.
  5. 5. Remove the pan from the heat and let the onions cool down completely.
  6. 6. Squeeze the soaked bread roll well with your hands so that no water remains.
  7. 7. Break the bread roll into small pieces.
  8. 8. Add the bread, the cooled onions, and the egg to the minced meat.
  9. 9. Stir the mustard and the herbs into the meat mixture.
  10. 10. Season everything generously with salt and pepper.
  11. 11. Check the consistency of the mixture.
  12. 12. If the mixture seems too wet, add a few breadcrumbs.
  13. 13. Form small, equal-sized balls from the mixture.
  14. 14. Heat the remaining oil in a pan.
  15. 15. Fry the meatballs in the hot oil for about 8 minutes.
  16. 16. Turn the balls regularly so that they turn golden brown on all sides.
  17. 17. Place the finished meatballs on a sheet of kitchen paper.
  18. 18. Let the excess fat drain off.
  19. 19. Let the meatballs cool down briefly.
  20. 20. Peel the garlic.
  21. 21. Chop the garlic very finely.
  22. 22. Mash the garlic with a pinch of salt into a smooth paste.
  23. 23. Stir the garlic paste and the mint into the yogurt.
  24. 24. Season the yogurt dip with salt, lemon juice, and pepper.
  25. 25. Skewer the meatballs onto fresh rosemary sprigs.
  26. 26. Garnish the skewers with sage leaves.
  27. 27. Alternatively, you can also insert a small rosemary sprig directly into each meatball.
  28. 28. Serve the meatballs together with the yogurt dip.
