🍽️ Crispy Rosemary Meatballs

Ingredients
- 1 stale roll
- 1 onion
- 3 tbsp vegetable oil
- 1 egg
- 600 g minced meat (mixed)
- 1 tsp hot mustard
- 2 tbsp freshly chopped herbs (e.g. thyme and parsley)
- Breadcrumbs (as needed)
- Salt
- Pepper (from the mill)
- 1 handful sage leaves
- 10 sprigs rosemary
- 1 clove garlic
- Salt
- 2 tbsp freshly chopped mint
- 300 g yogurt
- 1 dash lemon juice
- Pepper (from the mill)
Instructions
- 1. Place the bread roll in a bowl with lukewarm water.
- 2. Peel the onion and dice it into very small cubes.
- 3. Heat one tablespoon of oil in a pan.
- 4. Fry the onion cubes in the hot oil until they are soft and translucent.
- 5. Remove the pan from the heat and let the onions cool down completely.
- 6. Squeeze the soaked bread roll well with your hands so that no water remains.
- 7. Break the bread roll into small pieces.
- 8. Add the bread, the cooled onions, and the egg to the minced meat.
- 9. Stir the mustard and the herbs into the meat mixture.
- 10. Season everything generously with salt and pepper.
- 11. Check the consistency of the mixture.
- 12. If the mixture seems too wet, add a few breadcrumbs.
- 13. Form small, equal-sized balls from the mixture.
- 14. Heat the remaining oil in a pan.
- 15. Fry the meatballs in the hot oil for about 8 minutes.
- 16. Turn the balls regularly so that they turn golden brown on all sides.
- 17. Place the finished meatballs on a sheet of kitchen paper.
- 18. Let the excess fat drain off.
- 19. Let the meatballs cool down briefly.
- 20. Peel the garlic.
- 21. Chop the garlic very finely.
- 22. Mash the garlic with a pinch of salt into a smooth paste.
- 23. Stir the garlic paste and the mint into the yogurt.
- 24. Season the yogurt dip with salt, lemon juice, and pepper.
- 25. Skewer the meatballs onto fresh rosemary sprigs.
- 26. Garnish the skewers with sage leaves.
- 27. Alternatively, you can also insert a small rosemary sprig directly into each meatball.
- 28. Serve the meatballs together with the yogurt dip.
