🍰 Apple-Nut Rose Cake

Ingredients
- 400 g flour
- 100 g millet flour
- 1 cube yeast
- 0.25 l milk (lukewarm)
- 150 g honey
- 1 pinch salt
- 80 g butter
- 200 g hazelnuts (ground)
- 50 g hazelnuts
- 4 tbsp Calvados
- 50 g raisins
- 4 apples
- 0.5 lemon (juice)

- butter (for the pan)
- breadcrumbs (for the pan)
- 1 egg yolk
- 2 tbsp whipping cream
- whole, peeled almond kernels (for sprinkling)
- powdered sugar (for dusting)
Instructions
- 1. Mix both types of flour in a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Add some milk and stir the mixture.
- 5. Cover the bowl and let the dough rise in a warm place for about 20 minutes.
- 6. Add 50 grams of honey, salt, the remaining milk, and butter to the dough.
- 7. Knead the dough until it is smooth and pulls away from the sides of the bowl.
- 8. Cover the dough again and let it rise for about 50 minutes.
- 9. Process the ground hazelnuts, the remaining honey, and the Calvados in a food processor until you have a smooth cream.
- 10. Chop the whole hazelnuts coarsely.
- 11. Wash the raisins and let them drain in a sieve.
- 12. Peel the apples and cut them into quarters.
- 13. Core the apple quarters.
- 14. Grate the apples coarsely.
- 15. Mix the grated apples with lemon juice.
- 16. Knead the yeast dough on a floured work surface.
- 17. Roll the dough out into a rectangle about 30 by 60 centimeters.
- 18. Spread the hazelnut cream evenly over the dough.
- 19. Sprinkle the dough with the raisins.
- 20. Sprinkle the dough with the grated apples.
- 21. Sprinkle the dough with the chopped nuts.
- 22. Roll the dough up lengthwise.
- 23. Cut the dough roll into pieces about 5 centimeters wide using a sharp knife.
- 24. Grease a springform pan with butter.
- 25. Sprinkle the springform pan with breadcrumbs.
- 26. Place the dough rolls into the prepared pan.
- 27. Whisk the cream with the egg yolk.
- 28. Brush the dough with the cream and egg yolk mixture.
- 29. Sprinkle the dough with almonds.
- 30. Preheat the oven to 180 degrees Celsius fan-assisted.
- 31. Bake the cake in the preheated oven for about 50 to 60 minutes.
- 32. Remove the cake from the oven.
- 33. Let the cake rest for a short time.
- 34. Release the cake from the pan.
- 35. Let the cake cool on a cake rack.
- 36. Dust the cake with powdered sugar.
- 37. Serve the cake.
