  5. 5. Cover the bowl and let the dough rise in a warm place for about 20 minutes.
  6. 6. Add 50 grams of honey, salt, the remaining milk, and butter to the dough.
  7. 7. Knead the dough until it is smooth and pulls away from the sides of the bowl.
  8. 8. Cover the dough again and let it rise for about 50 minutes.
  9. 9. Process the ground hazelnuts, the remaining honey, and the Calvados in a food processor until you have a smooth cream.
  10. 10. Chop the whole hazelnuts coarsely.
  11. 11. Wash the raisins and let them drain in a sieve.
  12. 12. Peel the apples and cut them into quarters.
  13. 13. Core the apple quarters.
  14. 14. Grate the apples coarsely.
  15. 15. Mix the grated apples with lemon juice.
  16. 16. Knead the yeast dough on a floured work surface.
  17. 17. Roll the dough out into a rectangle about 30 by 60 centimeters.
  18. 18. Spread the hazelnut cream evenly over the dough.
  19. 19. Sprinkle the dough with the raisins.
  20. 20. Sprinkle the dough with the grated apples.
  21. 21. Sprinkle the dough with the chopped nuts.
  22. 22. Roll the dough up lengthwise.
  23. 23. Cut the dough roll into pieces about 5 centimeters wide using a sharp knife.
  24. 24. Grease a springform pan with butter.
  25. 25. Sprinkle the springform pan with breadcrumbs.
  26. 26. Place the dough rolls into the prepared pan.
  27. 27. Whisk the cream with the egg yolk.
  28. 28. Brush the dough with the cream and egg yolk mixture.
  29. 29. Sprinkle the dough with almonds.
  30. 30. Preheat the oven to 180 degrees Celsius fan-assisted.
  31. 31. Bake the cake in the preheated oven for about 50 to 60 minutes.
  32. 32. Remove the cake from the oven.
  33. 33. Let the cake rest for a short time.
  34. 34. Release the cake from the pan.
  35. 35. Let the cake cool on a cake rack.
