  1. 1. Remove the outer leaves from the Brussels sprouts and wash them thoroughly. Slice the vegetable into very thin strips or grate it finely. Add vinegar, honey, oil, and vegetable broth, then mix everything well. Let the mixture marinate for twenty minutes.
  2. 2. Meanwhile, prepare the papaya: peel it, cut it in half, and remove the seeds. Dice the flesh into small cubes. Roughly chop the walnuts. Crumble the sheep's cheese with your fingers. Wash the parsley, shake it dry, pick off the leaves, and chop them finely.
  3. 3. Mix the papaya with the marinated Brussels sprouts. Season the salad to taste with salt and pepper. Divide the salad among the plates and garnish with the parsley, walnuts, and sheep's cheese.
