  1. 1. Remove the white bases from the petals, as they can taste bitter. Wash the petals well and shake them dry.
  2. 2. Loosely fill the petals into a bottle, preferably a dark one. Pour the vinegar over them and seal the bottle tightly.
  3. 3. Let the vinegar infuse in a sunny place for about 3 weeks. Swirl the bottle occasionally. Strain the vinegar after 3 weeks and fill it into small, dark, sterilized bottles. Store it cool and dark.
  4. 4. This vinegar goes perfectly with leaf salads.
