Ingredients
- 800 g beef fillet, trimmed and ready for the kitchen (from the center piece)
- sea salt
- 0.5 tsp cumin seeds
- 1 tsp peppercorns
- 2 tbsp vegetable oil
Instructions
- 1. Preheat the oven to 140 degrees Celsius. Set the heating function to top and bottom heat.
- 2. Rinse the meat briefly and pat it dry with a kitchen towel.
- 3. Crush 1 teaspoon of salt, the cumin, and half of the pepper in a mortar until you have a fine powder.
- 4. Rub the meat all over with this spice mixture.
- 5. Heat oil in a pan and sear the meat on all sides until it is brown.
- 6. Remove the meat from the pan and set it aside for now.
- 7. Place a wire rack in the oven and put a drip tray underneath it to catch any rising juices.
- 8. Place the meat on the rack and put it in the oven.
- 9. Cook the meat for about 50 minutes. The exact time depends on the thickness of the piece and your desired level of doneness.
- 10. Check the core temperature. For a pink result, it should be between 55 and 60 degrees Celsius.
- 11. Remove the meat from the oven and let it rest on the rack for a few more minutes.
- 12. Crush the remaining salt and the rest of the pepper coarsely.
- 13. Sprinkle the coarse spices over the fillet.
- 14. Slice the meat on a wooden board using a sharp knife.
- 15. Serve the slices immediately.
