  1. 1. Preheat the oven to 140 degrees Celsius. Set the heating function to top and bottom heat.
  2. 2. Rinse the meat briefly and pat it dry with a kitchen towel.
  3. 3. Crush 1 teaspoon of salt, the cumin, and half of the pepper in a mortar until you have a fine powder.
  4. 4. Rub the meat all over with this spice mixture.
  5. 5. Heat oil in a pan and sear the meat on all sides until it is brown.
  6. 6. Remove the meat from the pan and set it aside for now.
  7. 7. Place a wire rack in the oven and put a drip tray underneath it to catch any rising juices.
  8. 8. Place the meat on the rack and put it in the oven.
  9. 9. Cook the meat for about 50 minutes. The exact time depends on the thickness of the piece and your desired level of doneness.
  10. 10. Check the core temperature. For a pink result, it should be between 55 and 60 degrees Celsius.
  11. 11. Remove the meat from the oven and let it rest on the rack for a few more minutes.
  12. 12. Crush the remaining salt and the rest of the pepper coarsely.
  13. 13. Sprinkle the coarse spices over the fillet.
  14. 14. Slice the meat on a wooden board using a sharp knife.
  15. 15. Serve the slices immediately.
