🥗 Romanesco and Broccoli Salad with Lime Dressing

Ingredients
- 500 g broccoli
- 500 g Romanesco
- salt
- 1 spring onion
- 100 g sour cream
- 100 g yogurt
- 1 lime (juice)
- 1 tsp maple syrup
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the broccoli and Romanesco under running water.
- 2. Break the vegetables into small florets.
- 3. Fill a large pot with water, add salt, and bring it to a boil.
- 4. Add the Romanesco to the boiling water.
- 5. Let the Romanesco simmer for 2 to 3 minutes.
- 6. Add the broccoli to the pot with the Romanesco.
- 7. Cook the vegetables for another 5 minutes.
- 8. Drain the vegetables in a colander.
- 9. Rinse the vegetables with cold water to stop the cooking process.
- 10. Let the vegetables drain well.
- 11. Wash the spring onion and trim the ends.
- 12. Finely chop the spring onion.
- 13. Mix the sour cream and yogurt in a bowl.
- 14. Add the lime juice to the cream-yogurt mixture.
- 15. Add the maple syrup.
- 16. Season the dressing with a pinch of salt.
- 17. Add 2 to 3 tablespoons of water.
- 18. Stir everything well until a creamy sauce forms.
- 19. Pour the dressing over the drained vegetables.
- 20. Grind fresh pepper over the salad.
- 21. Serve the salad immediately.
