  1. 1. Thoroughly wash the broccoli and Romanesco under running water.
  2. 2. Break the vegetables into small florets.
  3. 3. Fill a large pot with water, add salt, and bring it to a boil.
  4. 4. Add the Romanesco to the boiling water.
  5. 5. Let the Romanesco simmer for 2 to 3 minutes.
  6. 6. Add the broccoli to the pot with the Romanesco.
  7. 7. Cook the vegetables for another 5 minutes.
  8. 8. Drain the vegetables in a colander.
  9. 9. Rinse the vegetables with cold water to stop the cooking process.
  10. 10. Let the vegetables drain well.
  11. 11. Wash the spring onion and trim the ends.
  12. 12. Finely chop the spring onion.
  13. 13. Mix the sour cream and yogurt in a bowl.
  14. 14. Add the lime juice to the cream-yogurt mixture.
  15. 15. Add the maple syrup.
  16. 16. Season the dressing with a pinch of salt.
  17. 17. Add 2 to 3 tablespoons of water.
  18. 18. Stir everything well until a creamy sauce forms.
  19. 19. Pour the dressing over the drained vegetables.
  20. 20. Grind fresh pepper over the salad.
  21. 21. Serve the salad immediately.
