🍽️ Raw Coconut Macarons with Strawberry Filling

Ingredients
- 100 g freeze-dried strawberries
- 2.5 tbsp chia seeds (15 g)
- 4.5 tsp liquid coconut oil
- 2 tsp date sweetener or coconut blossom sugar (5 g each)
- 60 g oat flakes
- 150 g ground almonds
- 100 g coconut flakes
- 100 g rice syrup (or agave nectar)
- 2 pinch salt
- 1 –2 organic lime (zest)
Instructions
- 1. Wash the strawberries thoroughly.
- 2. Chop the strawberries into coarse pieces.
- 3. Set aside one tablespoon of the strawberry pieces for later.
- 4. Place the remaining strawberries into a blender.
- 5. Add one tablespoon of chia seeds.
- 6. Add half a teaspoon of coconut oil.
- 7. Sweeten the mixture with some date sweetener.
- 8. Blend the ingredients until a smooth paste forms.
- 9. Let the strawberry filling sit for at least 20 minutes to allow the chia seeds to swell.
- 10. Taste the filling at the end and adjust the seasoning if needed.
- 11. Stir the remaining chia seeds into the filling.
- 12. Grind the oat flakes finely in a blender to make flour.
- 13. Transfer the oat flour and ground almonds into a bowl.
- 14. Add 90 grams of coconut flakes.
- 15. Add 20 milliliters of water.
- 16. Sweeten the mixture with rice syrup or agave nectar.
- 17. Add a pinch of salt.
- 18. Add the remaining coconut oil.
- 19. Mix everything until you have a smooth, homogeneous paste.
- 20. If the dough is too sticky, knead in a little more ground almonds.
- 21. Chill the dough mixture in the refrigerator for about 15 minutes to firm it up.
- 22. Divide the dough into 30 equal portions.
- 23. Roll the portions into small balls.
- 24. Flatten the balls slightly to form small discs.
- 25. Place about one teaspoon of the strawberry filling onto the center of each disc.
- 26. Place a second disc on top, aligning it perfectly.
- 27. Press down gently to seal the filling inside.
- 28. Repeat this process with the remaining dough.
- 29. Garnish the finished macarons with the leftover coconut flakes.
- 30. Garnish the macarons with the lime zest.
- 31. Garnish the macarons with the reserved strawberries.
- 32. Chill the macarons in the refrigerator for at least 30 minutes before serving.
