🍰 Raw Brownies with Cashew Nuts

Ingredients
- 450 g dried dates
- 150 g cashew nuts
- 300 g ground almond kernels
- 110 g cocoa powder (highly defatted)
- 45 g almond flour (3 tbsp)
- 1 pinch salt
- 0.5 vanilla pod
Instructions
- 1. Cover the dates with just enough water.
- 2. Let the dates soak overnight.
- 3. Drain the date water the next day.
- 4. Set the date water aside for later use.
- 5. Blend the soaked dates into a creamy paste using a hand blender.
- 6. Add a little of the reserved date water if the mixture is too thick.
- 7. Chop the cashew nuts coarsely.
- 8. Slice the vanilla pod in half lengthwise.
- 9. Scrape out the vanilla seeds.
- 10. Put the almonds, cocoa powder, and almond flour into a bowl.
- 11. Add 100 grams of the chopped cashew nuts to the bowl.
- 12. Add a pinch of salt and the vanilla seeds to the bowl.
- 13. Mix the dry ingredients with the date paste until a dough forms.
- 14. Line a baking dish (30 x 20 cm) with baking paper.
- 15. Transfer the dough into the prepared dish.
- 16. Press the dough firmly into the dish.
- 17. Let the dough set in the refrigerator for at least 4 hours.
- 18. Cut the set brownies into 15 equal pieces.
- 19. Garnish the brownies with the remaining cashew nuts.
