  1. 1. Cover the dates with just enough water.
  2. 2. Let the dates soak overnight.
  3. 3. Drain the date water the next day.
  4. 4. Set the date water aside for later use.
  5. 5. Blend the soaked dates into a creamy paste using a hand blender.
  6. 6. Add a little of the reserved date water if the mixture is too thick.
  7. 7. Chop the cashew nuts coarsely.
  8. 8. Slice the vanilla pod in half lengthwise.
  9. 9. Scrape out the vanilla seeds.
  10. 10. Put the almonds, cocoa powder, and almond flour into a bowl.
  11. 11. Add 100 grams of the chopped cashew nuts to the bowl.
  12. 12. Add a pinch of salt and the vanilla seeds to the bowl.
  13. 13. Mix the dry ingredients with the date paste until a dough forms.
  14. 14. Line a baking dish (30 x 20 cm) with baking paper.
  15. 15. Transfer the dough into the prepared dish.
  16. 16. Press the dough firmly into the dish.
  17. 17. Let the dough set in the refrigerator for at least 4 hours.
  18. 18. Cut the set brownies into 15 equal pieces.
  19. 19. Garnish the brownies with the remaining cashew nuts.
