🍽️ Raw Tuna with Spinach

Ingredients
- 250 g young spinach
- 1 shallot
- 1 tbsp sesame oil
- 1 tsp lime juice
- salt
- pepper (from the mill)
- 350 g tuna (sushi quality)
- 2 tbsp sesame (black and white)
- 4 tbsp light fish sauce
Instructions
- 1. Wash the spinach, remove the tough stems, and spin it dry. Peel the shallot and chop it finely. Sauté it in the hot pan with the oil until translucent. Add the spinach, let it wilt, and season with lime juice, salt, and pepper. Remove the pan from the heat.
- 2. Cut the tuna into long strips and roll them in the sesame seeds. Then slice the pieces into 4 to 5 millimeter thick slices.
- 3. Arrange the warm spinach on the plates and place the tuna slices on top. Sprinkle with the remaining sesame seeds and drizzle with fish sauce before serving.
