  3. 3. Place the berries in a large bowl.
  4. 4. Add the lemon juice.
  5. 5. Add the sugar.
  6. 6. Mash the fruit with a potato masher.
  7. 7. Turn on the hand mixer.
  8. 8. Whisk the mixture for 20 to 25 minutes.
  9. 9. Turn off the mixer occasionally to prevent overheating.
  10. 10. Stop when the sugar is completely dissolved.
  11. 11. Rinse the jars with very hot water.
  12. 12. Let the jars drip dry on a kitchen towel.
  13. 13. Swirl a little rum inside each jar.
  14. 14. Pour the excess rum into a small bowl.
  15. 15. Cut round pieces of parchment paper.
  16. 16. The pieces must be large enough to cover the jam completely.
  17. 17. Dip the paper circles into the rum.
  18. 18. Fill the jars with the jam.
  19. 19. Place the wet paper circles directly on the surface.
  20. 20. Seal the jars with the lids.
  21. 21. Place the jars in the refrigerator for 12 hours.
  22. 22. Allow the air to escape.
  23. 23. Store the jam in a cool place.
