🍽️ Crispy Rösti with Salmon and Halibut

Ingredients
- 1 kg cooked potatoes (from the day before)
- salt
- pepper (from the mill)
- 1 egg
- 2 tbsp milk
- 3 tbsp ghee
- 400 g salmon fillet (whole piece, with skin, kitchen-ready)
- lemon juice
- 2 tbsp vegetable oil
- 0.5 bunch parsley
- 400 g plain yogurt
- 5 tbsp crème fraîche
- 8 slices smoked halibut
Instructions
- 1. Peel the potatoes and grate them coarsely.
- 2. Season the grated potatoes with salt and pepper.
- 3. Whisk the egg with the milk in a separate bowl.
- 4. Heat the ghee in four small non-stick pans.
- 5. Add the potatoes to the pans and shape them into flat cakes using a spatula.
- 6. Drizzle the egg-milk mixture over the potato cakes.
- 7. Cover the pans and fry the rösti until crispy over very low heat for about 20 minutes.
- 8. Carefully flip the rösti using a pan lid or a plate.
- 9. Fry the other side until crispy for a short time over slightly higher heat.
- 10. Rinse the salmon under running water and pat it dry with kitchen paper.
- 11. Drizzle the salmon with lemon juice and season with salt and pepper.
- 12. Heat oil in a hot pan and place the salmon skin-side down in it.
- 13. Fry the salmon for 3 to 4 minutes on the skin side.
- 14. Turn the salmon, reduce the heat, and let it cook through.
- 15. Rinse the parsley and shake it dry.
- 16. Pluck the parsley leaves from the stems and chop them finely.
- 17. Mix the chopped parsley with yogurt and crème fraîche.
- 18. Season the yogurt mixture with salt, pepper, and a splash of lemon juice.
- 19. Carefully slice the cooked salmon.
- 20. Distribute the smoked halibut pieces and a dollop of herb yogurt on the rösti.
- 21. Serve the dishes garnished with a small salad if desired.
