🍽️ Crispy Rösti with Melted Gruyere

Ingredients
- 1 kg mostly waxy potatoes
- salt
- pepper (from the mill)
- clarified butter (for frying)
- 150 g Gruyère cheese
Instructions
- 1. Peel the potatoes.
- 2. Grate the peeled potatoes coarsely.
- 3. Season the grated potatoes with salt and pepper.
- 4. Squeeze the potatoes well to remove excess moisture.
- 5. Heat a large non-stick pan over medium heat.
- 6. Add 1 to 2 tablespoons of ghee to the hot pan.
- 7. Place the squeezed potatoes into the pan.
- 8. Spread the potatoes evenly in the pan.
- 9. Press the potatoes down slightly to create a flat shape.
- 10. Fry the rösti over medium heat for 5 to 6 minutes until golden brown.
- 11. If necessary, add a little more ghee.
- 12. Flip the rösti using a plate.
- 13. Add some ghee to the other side of the rösti.
- 14. Fry the rösti on the second side for another 5 to 6 minutes until golden brown.
- 15. Grate fresh Gruyere cheese.
- 16. Serve the finished rösti with the freshly grated Gruyere cheese.
