  1. 1. Peel the potatoes.
  2. 2. Grate the peeled potatoes coarsely.
  3. 3. Season the grated potatoes with salt and pepper.
  4. 4. Squeeze the potatoes well to remove excess moisture.
  5. 5. Heat a large non-stick pan over medium heat.
  6. 6. Add 1 to 2 tablespoons of ghee to the hot pan.
  7. 7. Place the squeezed potatoes into the pan.
  8. 8. Spread the potatoes evenly in the pan.
  9. 9. Press the potatoes down slightly to create a flat shape.
  10. 10. Fry the rösti over medium heat for 5 to 6 minutes until golden brown.
  11. 11. If necessary, add a little more ghee.
  12. 12. Flip the rösti using a plate.
  13. 13. Add some ghee to the other side of the rösti.
  14. 14. Fry the rösti on the second side for another 5 to 6 minutes until golden brown.
  15. 15. Grate fresh Gruyere cheese.
  16. 16. Serve the finished rösti with the freshly grated Gruyere cheese.
