🍽️ Crispy Potato Rösti with Smoked Trout and Watercress

Ingredients
- 400 g mostly waxy potatoes
- 1 egg yolk
- 1 tsp potato starch (depending on the potato variety)
- salt
- nutmeg
- vegetable oil (for frying)
- 1 handful watercress
- 100 g smoked trout
Instructions
- 1. Peel the potatoes and grate them finely.
- 2. Place the grated potatoes in a damp kitchen towel.
- 3. Squeeze the towel tightly to remove the moisture.
- 4. Let the released potato juice sit briefly in a bowl.
- 5. Pour off the liquid, but keep the starch that has settled at the bottom.
- 6. Mix the dry potatoes with the egg yolk and the drained starch.
- 7. Season the mixture with salt and ground nutmeg.
- 8. Heat oil in a non-stick pan.
- 9. Take small portions of the potato mixture and place them in the hot pan.
- 10. Press the mounds flat to form round rösti patties.
- 11. Fry the rösti for 2 to 3 minutes until golden brown on one side.
- 12. Turn the rösti and fry for another 2 to 3 minutes until golden brown.
- 13. Place the finished rösti on kitchen paper to absorb excess fat.
- 14. Rinse the watercress under cold water.
- 15. Gently pat the cress dry with a cloth.
- 16. Crumble the smoked trout into bite-sized pieces.
- 17. Top the rösti with the watercress and the trout.
- 18. Serve the rösti as a delicious appetizer.
