  1. 1. Peel the potatoes and grate them finely.
  2. 2. Place the grated potatoes in a damp kitchen towel.
  3. 3. Squeeze the towel tightly to remove the moisture.
  4. 4. Let the released potato juice sit briefly in a bowl.
  5. 5. Pour off the liquid, but keep the starch that has settled at the bottom.
  6. 6. Mix the dry potatoes with the egg yolk and the drained starch.
  7. 7. Season the mixture with salt and ground nutmeg.
  8. 8. Heat oil in a non-stick pan.
  9. 9. Take small portions of the potato mixture and place them in the hot pan.
  10. 10. Press the mounds flat to form round rösti patties.
  11. 11. Fry the rösti for 2 to 3 minutes until golden brown on one side.
  12. 12. Turn the rösti and fry for another 2 to 3 minutes until golden brown.
  13. 13. Place the finished rösti on kitchen paper to absorb excess fat.
  14. 14. Rinse the watercress under cold water.
  15. 15. Gently pat the cress dry with a cloth.
  16. 16. Crumble the smoked trout into bite-sized pieces.
  17. 17. Top the rösti with the watercress and the trout.
  18. 18. Serve the rösti as a delicious appetizer.
