🍽️ Crispy Potato Rösti with Fresh Salmon

Ingredients
- 4 starchy potatoes
- oil (for frying)
- salt
- 400 g salmon fillet (very fresh)
- 1 orange
- white pepper
- 4 tbsp keta caviar
- 100 g sour cream
- basil (for garnish)
- 4 lemon wedges
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Peel the potatoes completely.
- 3. Cut the potatoes into long, thin strands (potato spaghetti) using a spiralizer.
- 4. Place the potato strips on kitchen paper to let excess water drain off.
- 5. Heat some oil in a large, flat frying pan.
- 6. Take a portion of the potatoes and shape it into a large, flat rösti.
- 7. Fry the rösti in the pan until it is golden brown and crispy on both sides.
- 8. Repeat this process until you have fried a total of four large rösti.
- 9. Place the finished rösti on kitchen paper to absorb excess fat.
- 10. Cut the salmon into small, even cubes.
- 11. Squeeze the juice of one orange.
- 12. Mix the salmon cubes with the orange juice in a bowl.
- 13. Season the salmon mixture with some black pepper.
- 14. Take one rösti and sprinkle it lightly with salt.
- 15. Place a spoonful of the salmon mixture onto the salted rösti.
- 16. Add a teaspoon of salmon roe (caviar) as a topping.
- 17. Add a dollop of sour cream as a garnish.
- 18. Squeeze some lemon juice over the dish.
- 19. Garnish the rösti with fresh basil leaves.
- 20. Serve the finished dish immediately.
