🍽️ Crispy Potato Pancakes

Ingredients
- 1 kg floury potatoes
- 3 eggs
- 60 g flour
- 0.125 l vegetable oil
- salt
- grated nutmeg
- 500 g applesauce (from a jar)
- 300 g sour cream (or Creme double)
Instructions
- 1. Rinse the potatoes under running water.
- 2. Peel the potatoes completely.
- 3. Grate the potatoes coarsely.
- 4. Place the grated potatoes in a sieve.
- 5. Let the liquid drain from the potatoes.
- 6. Catch the draining water in a separate bowl.
- 7. Wait until the starch has settled at the bottom of the bowl.
- 8. Carefully lift the settled starch from the bowl.
- 9. Mix the starch with the grated potatoes.
- 10. Stir the eggs into the potato mixture.
- 11. Add the flour to the mixture and combine it.
- 12. Season the mixture with salt.
- 13. Add ground nutmeg.
- 14. Heat some oil in a non-stick frying pan.
- 15. Take a tablespoon of the potato mixture.
- 16. Place small mounds into the hot oil.
- 17. Flatten the mounds with the spoon.
- 18. Fry the pancakes on one side until golden yellow.
- 19. Flip the pancakes.
- 20. Fry them on the second side until crispy as well.
- 21. Serve the finished pancakes with apple sauce.
- 22. Add crème fraîche as a topping.
