🍽️ Crispy Potato Rösti

Ingredients
- 1 kg mostly waxy potatoes
- salt
- pepper (from the mill)
- ghee (for frying)
- 1 tbsp butter
Instructions
- 1. Peel the potatoes.
- 2. Grate the potatoes coarsely.
- 3. Season the grated potatoes with salt and pepper.
- 4. Squeeze the potatoes firmly with your hands to remove excess liquid.
- 5. Heat a large, non-stick frying pan.
- 6. Add 1 to 2 tablespoons of ghee (clarified butter) to the hot pan.
- 7. Add the squeezed potatoes to the pan.
- 8. Spread the potatoes evenly in the pan.
- 9. Press the potatoes down slightly to form a flat pancake.
- 10. Add a bit of butter to the pan.
- 11. Fry the rösti over medium heat for 5 to 6 minutes until golden brown.
- 12. Extend the cooking time if necessary if it is not yet golden brown.
- 13. Place a plate on top of the rösti.
- 14. Flip the rösti in the pan using the plate.
- 15. Add a bit more ghee to the pan.
- 16. Fry the other side of the rösti for 5 to 6 minutes until golden brown.
- 17. Remove the rösti from the pan.
- 18. Place the rösti on kitchen paper to absorb excess fat.
- 19. Cut the rösti into pieces.
- 20. Serve the rösti warm.
