  1. 1. Peel the potatoes.
  2. 2. Grate the potatoes coarsely.
  3. 3. Season the grated potatoes with salt and pepper.
  4. 4. Squeeze the potatoes firmly with your hands to remove excess liquid.
  5. 5. Heat a large, non-stick frying pan.
  6. 6. Add 1 to 2 tablespoons of ghee (clarified butter) to the hot pan.
  7. 7. Add the squeezed potatoes to the pan.
  8. 8. Spread the potatoes evenly in the pan.
  9. 9. Press the potatoes down slightly to form a flat pancake.
  10. 10. Add a bit of butter to the pan.
  11. 11. Fry the rösti over medium heat for 5 to 6 minutes until golden brown.
  12. 12. Extend the cooking time if necessary if it is not yet golden brown.
  13. 13. Place a plate on top of the rösti.
  14. 14. Flip the rösti in the pan using the plate.
  15. 15. Add a bit more ghee to the pan.
  16. 16. Fry the other side of the rösti for 5 to 6 minutes until golden brown.
  17. 17. Remove the rösti from the pan.
  18. 18. Place the rösti on kitchen paper to absorb excess fat.
  19. 19. Cut the rösti into pieces.
  20. 20. Serve the rösti warm.
