  1. 1. Wash the fennel thoroughly and remove the tough stalks.
  2. 2. Slice the fennel flesh into very thin pieces.
  3. 3. Heat 2 to 3 tablespoons of oil in a pan.
  4. 4. Place the fennel slices into the hot oil.
  5. 5. Cover the pan and simmer the fennel over medium heat for 5 minutes.
  6. 6. Turn the fennel once during cooking.
  7. 7. Season the fennel with salt and pepper.
  8. 8. Take the crab meat out of the can and let it drain.
  9. 9. Chop the crab meat even finer with a sharp knife.
  10. 10. Mix the meat with 1 tablespoon of oil, salt, pepper, and lemon juice.
  11. 11. Grill or toast the bread slices until crispy.
  12. 12. Top the toasts with the fennel and the crab meat.
  13. 13. Garnish the toasts as desired with fresh herbs or arugula.
  14. 14. Serve the toasts immediately.
