🍽️ Crispy Toasts with Fennel and Crab Meat

Ingredients
- 8 slices white bread
- 250 g crab meat (can)
- 1 bulb fennel (1 large fennel)
- olive oil (cold-pressed)
- salt
- pepper (freshly ground)
- 2 tbsp lemon juice
Instructions
- 1. Wash the fennel thoroughly and remove the tough stalks.
- 2. Slice the fennel flesh into very thin pieces.
- 3. Heat 2 to 3 tablespoons of oil in a pan.
- 4. Place the fennel slices into the hot oil.
- 5. Cover the pan and simmer the fennel over medium heat for 5 minutes.
- 6. Turn the fennel once during cooking.
- 7. Season the fennel with salt and pepper.
- 8. Take the crab meat out of the can and let it drain.
- 9. Chop the crab meat even finer with a sharp knife.
- 10. Mix the meat with 1 tablespoon of oil, salt, pepper, and lemon juice.
- 11. Grill or toast the bread slices until crispy.
- 12. Top the toasts with the fennel and the crab meat.
- 13. Garnish the toasts as desired with fresh herbs or arugula.
- 14. Serve the toasts immediately.
