  1. 1. Peel the garlic cloves and cut them in half.
  2. 2. Drain the mozzarella, remove it from the liquid, and cut it into eight equal pieces.
  3. 3. Mix the olive oil with the fresh herbs in a small bowl.
  4. 4. Preheat the grill and brush one side of the bread slices with some oil.
  5. 5. Place the breads oiled-side down on the hot grill and toast them for 1 to 2 minutes until crispy.
  6. 6. Remove the breads from the grill and rub the toasted side vigorously with the halved garlic cloves.
  7. 7. Drizzle the herb-oil mixture over the toasted side of the breads.
  8. 8. Top each bread with a piece of mozzarella, two basil leaves, and one slice of prosciutto.
  9. 9. Season the topped breads with coarse salt and black pepper.
  10. 10. Place the breads back on the grill and grill them for another 1 to 2 minutes until the cheese has melted.
  11. 11. Remove the finished toasts from the grill and serve them immediately on plates.
