Ingredients
- 1 Ciabatta
- Butter
- Olive oil
- 1 finely chopped garlic clove
- 5 ripe tomatoes
- 1 bunch fresh basil
- 50 g grated Parmesan
- Salt
- Pepper
- Sugar
Instructions
- 1. Slice the bread into even pieces.
- 2. Heat the butter in a frying pan.
- 3. Fry the bread slices until they are golden yellow.
- 4. Place the toasted bread on kitchen paper to let it cool down.
- 5. Add the olive oil to the still hot pan.
- 6. Heat the oil together with the garlic.
- 7. Add the finely chopped tomatoes to the pan.
- 8. Let the tomatoes simmer until they have a jam-like, soft consistency.
- 9. Season the tomatoes with salt, pepper, and a pinch of sugar.
- 10. Fold the fresh basil leaves into the tomatoes.
- 11. Stir the grated Parmesan cheese into the tomato mixture.
- 12. Place the warm tomato mixture onto the prepared bread slices.
