🍽️ Crunchy Toast with Fresh Herb Pesto and Avocado

Ingredients
- 8 slices country bread
- 1 clove garlic
- leaves from 1 bunch parsley (and basil)
- 5 tbsp olive oil
- salt
- pepper (from the mill)
- 2 avocados
- 1 tbsp lemon juice
Instructions
- 1. Preheat your oven to 200 degrees Celsius.
- 2. Place the bread slices flat on a baking sheet.
- 3. Toast the bread in the hot oven until it is golden brown and crunchy.
- 4. Put the fresh herbs, olive oil, salt, and pepper into a blender.
- 5. Blend the ingredients until you have a smooth paste.
- 6. Peel the avocados and carefully remove the pits.
- 7. Cut the avocado flesh into small cubes.
- 8. Drizzle the avocado cubes with lemon juice immediately to prevent them from turning brown.
- 9. Spread the herb pesto evenly over the toasted bread slices.
- 10. Distribute the avocado cubes generously over the pesto.
- 11. Season the dish finally with a little fresh pepper.
- 12. Serve the toast immediately and enjoy.
