🍽️ Chicken and Pineapple Salad with Peanuts

Ingredients
- 300 g chicken breast fillet
- salt, pepper
- 2 tbsp unsalted peanuts and olive oil each
- 1 romaine lettuce
- 250 g pineapple
- 1 pinch crushed chili
- juice of one lemon
- 2 bananas
- 2 baguette slices
Instructions
- 1. Season the chicken breast fillet with salt and pepper.
- 2. Heat 1 tablespoon of olive oil in a non-stick pan.
- 3. Sear the chicken on both sides.
- 4. Add a small splash of water to the pan.
- 5. Cook the meat for 12 to 15 minutes.
- 6. Coarsely chop the peanuts.
- 7. Roast the peanuts without fat in a small pan.
- 8. Wash the romaine lettuce and tear it into bite-sized pieces.
- 9. Spin the salad dry.
- 10. Cut the pineapple into small pieces.
- 11. Puree 50 grams of the pineapple with chili, lemon juice, and the remaining olive oil to make a dressing.
- 12. Peel the bananas and slice them.
- 13. Slice the cooked chicken.
- 14. Arrange the salad with chicken, bananas, and pineapple.
- 15. Pour the pineapple dressing over it.
- 16. Sprinkle the dish with the roasted peanuts.
- 17. Serve the salad with baguette.
