🍽️ Fresh romaine salad with peas, goat cheese, and onions

Ingredients
- 1 romaine lettuce
- 200 g peas
- salt
- 1 red onion
- 250 g feta
- 4 tbsp white balsamic vinegar
- 1 tbsp lemon juice
- 1 tsp honey
- 5 tbsp grapeseed oil
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the romaine lettuce under running water.
- 2. Remove any wilted greens and tear the leaves into bite-sized pieces if necessary.
- 3. Bring a pot of salted water to a boil.
- 4. Add the peas to the boiling water and cook them for 1 to 2 minutes.
- 5. Immediately remove the peas from the water and rinse them with cold water to stop the cooking process.
- 6. Let the peas drain well in a colander.
- 7. Peel the onion and dice it into small cubes.
- 8. Crumble the goat cheese (feta) into small pieces using your hands.
- 9. Whisk balsamic vinegar, lemon juice, honey, and oil together in a small bowl.
- 10. Season the dressing to taste with salt and pepper.
- 11. Divide the washed lettuce among individual plates or bowls.
- 12. Top the salad with the drained peas, onion cubes, and cheese.
- 13. Drizzle the finished salad with the dressing and serve immediately.
