  2. 2. Remove any wilted greens and tear the leaves into bite-sized pieces if necessary.
  3. 3. Bring a pot of salted water to a boil.
  4. 4. Add the peas to the boiling water and cook them for 1 to 2 minutes.
  5. 5. Immediately remove the peas from the water and rinse them with cold water to stop the cooking process.
  6. 6. Let the peas drain well in a colander.
  7. 7. Peel the onion and dice it into small cubes.
  8. 8. Crumble the goat cheese (feta) into small pieces using your hands.
  9. 9. Whisk balsamic vinegar, lemon juice, honey, and oil together in a small bowl.
  10. 10. Season the dressing to taste with salt and pepper.
  11. 11. Divide the washed lettuce among individual plates or bowls.
  12. 12. Top the salad with the drained peas, onion cubes, and cheese.
  13. 13. Drizzle the finished salad with the dressing and serve immediately.
