🍽️ Romaine Salad with Pear and Goat Cheese Dressing

Ingredients
- 60 g goat cream cheese
- 2 tbsp sour cream
- 2 tbsp olive oil
- 1.5 tbsp red wine vinegar
- 75 ml classic vegetable broth
- 0.5 lemon
- salt
- pepper
- 3 romaine lettuce hearts
- 100 g celery
- 1 pear
Instructions
- 1. Put the goat cream cheese, sour cream, olive oil, and vinegar into a tall container.
- 2. Bring the broth to a boil.
- 3. Pour the boiling broth directly into the container with the cheese and cream mixture.
- 4. Squeeze the lemon.
- 5. Blend the cheese mixture with a hand blender until it is frothy and creamy.
- 6. Season the dressing with salt, pepper, and a small splash of lemon juice.
- 7. Set the finished dressing aside.
- 8. Remove the outer, wilted leaves from the romaine lettuce.
- 9. Trim off the hard core at the bottom of the lettuce head slightly.
- 10. Cut the lettuce hearts into six pieces.
- 11. Wash the lettuce pieces thoroughly.
- 12. Spin the lettuce dry, for example in a salad spinner.
- 13. Wash the celery stalks.
- 14. Remove the stringy fibers from the celery stalk.
- 15. Slice the celery into very thin slices.
- 16. Wash the pear.
- 17. Cut the pear into four quarters.
- 18. Remove the core of the pear.
- 19. Cut the pear pieces into thin strips.
- 20. Place the dry romaine lettuce on the plates.
- 21. Distribute the pear strips and celery slices over the lettuce.
- 22. Drizzle the salads with half of the goat cheese sauce.
- 23. Serve the rest of the sauce separately.
